Discover the rich history and cultural significance of this extraordinary grain with the Orozco-Santos family, who will share their knowledge, seed saving practice, and experience cooking with the grain. This workshop is a celebration of the heritage and traditions that have revolved around amaranth for centuries. Throughout the workshop, community members will: Learn about Amaranth's Historical Significance: Dive into the past as Rubi Orozco takes you on a compelling journey through the history and importance of amaranth in various cultures. Practice Saving Amaranth Seed: Get hands-on experience as you participate in processing and saving seed from Amaranth. Learn the valuable art of preserving amaranth seeds for future generations. Learn about the Celebration of Panquetzaliztli: Explore the rich Mexican traditions and their connection to amaranth. Ome Tlaloc, a local farmer and traditional tattoo artist, will guide you through the significance of Panquetzaliztli, an Aztec celebration of the season, and its ties to amaranth. Craft Tzoalli: Delve into the art of shaping amaranth into delectable candy. Learn the techniques and secrets to creating Tzoalli, a delightful amaranth-based treat. In Mexico, during the holy month of Panquetzaliztli, which corresponds to our December, people used to mix popped amaranth grain with honey to make a special dough known as tzoalli. Savor Amaranth and Cacao Atole: One delicious way to eat Amaranth is in an atole. Participants will learn how to make and enjoy an amaranth and cacao atole and take home ingredients to make the recipe at home.
